That New Lime Seltzer

Hard Seltzer w/ Fresh Squeezed Lime

We wanted to keep this super yummo sun-time refresher nice & simple. So, what's in That New Lime Seltzer? First, we fresh squeeze in half a lime, then fill it with 16oz of our sparkling hard seltzer, scoop some ice on top, & then hit with a fresh lime wheel. Boom! That's it! Easy peasy.

Lavender Lemonade

Sparkling Hard Seltzer w/ Lavender & Lemon

We’ve got some Hard Lemonade for sale! And look at that color! That beautiful, natural color comes from the use of an insane amount of lavender pods that we use to brew a ginormous, fresh batch of lavender tea, that then gets blended with our lemonade-style seltzer. It drinks pretty balanced, with the acidity and sweetness hitting at just the right level, and then a soft tannic hit of dryness from the lavender. Enjoy straight out of the can, or pour over ice. Also legit with a dram of Old Tom Gin.

Spring G&T

A Gin & Tonic-Style Hard Seltzer - Orange

Our Spring iteration of this rotating seasonal sipper is a strong, more contemporary-style G&T, that focuses on a range of different citrus types to get us into more mmmmmhs and ahhhhhhs. Fresh zests of Lemon, Grapefruit, Mandarin, and Sweet Lime were used, along with some dried citrus, damiana leaf, ginger root and a dab of spruce tips. We had a fun in-house competition of who could make the best version, and one of our brewers out of Orange (Josh!) won this round with his lemon forward G&T that shows through with just the right amount of spice. Served over ice with some fresh expressed lemon peel.

A German-Style Pilsner

We all know a fresh German Pils is hard to come by. Luckily for all of us, Jeff brewed up an insanely legit batch out of our spot in O’side and we’ve now got it in 12oz cans! Made to be as traditional as possible using all German ingredients, the texture on this one is wonderfully firm in bitterness and greets your palate with mouth coating dryness that lingers in the long finish. It’s not too much of this, or not enough of that, but just right in its endless drinkability. Cheers to warmer weather and birds chirp’n!!!

A Mexican-Style Lager

If you’re looking for an easy drinking lager made out of our brewery in O’side, you’ve come to the right place! Made with pilsner malt and just the right amount of corn, this one goes light on the hops to showcase it all just perfectly. Feel free to add a lime if you’re feeling it!!!

German For Light

Munich-Style Helles Lager

Listen up Lager Pallys™, Jeff has another liter worthy classic coming out of our O’side spot that you’ll need to come in for, cause this one is draft only. Similar to Bier (our Helles that we’ve made so many times here at GC), but with a different yeast strain and pilsner malt. The result is a touch richer and more full than our normal take. It’s lovely. Fresh baked bread like aromatics and flavor, with a soft roundness on the palate, and just enough hop bitterness to maintain excellent drinkability.

A Little Too Sessionable, Even For Me

A New School 10° Czech-Style Pale Lager w/Michigan Saaz & a dab of Luminosa

We brewed up a super traditional Czech-style Lager at the Orange brewery using floor-malted barley straight from the source, & then made a couple changes on the hopping than what would considered to be traditional. We went heavy on the Saaz that was grown in Michigan, & then finished this one with a little bit of Luminosa (grown by our pals @‌indiehops ) & Nectaron (from our pals @‌machops ) in the whirlpool & the super light dry hop. The result is full of wonderful, well integrated bitterness from all of that Saaz, & even has all the yummy herbal undertones from it too. There’s a delicate orange zestiness that shows through on the palate from those new school hops, but since they weren’t heavy handed, it all plays super nice together.

Nectaron!? In This Economy?!

A Hoppy Pils w 100% Nectaron Hops

With the absolute legend Dr Ron coming into town from New Zealand, we wanted to make something that he could sip on while teaching us all about his life’s work in creating our favorite Southern Hemisphere hops. Using Brent’s hops from @‌machopsnz , this West Coast Pils is saturated with Nectaron from whirlpool to dry hop, and it hits with a wide range of characteristics. Flavor profile? Think the freshest and fruitiest cannabis, new tennis balls, orange zest, and dry riesling.

Smooth Is Fast

West Coast Pils w/ Nelson & Citra

Using Nelson during active fermentation, and then sprinkling in our Citra after, this joint hits with flavors/aromatic profile of cucumber spa water, kumquat, cherry blossoms, and watermelon.

Second Hand Embarrassment

Collab w/ @‌balterbrewers // A Clear IPA w/ Scotty's Favorite Hops: Mosaic, Manilita, & Riwaka

Bringing your favorite Aussie in for a brew day is kind of like that one book “If You Give a Mouse a Cookie”… you give that man an inch and he takes a mile! The next thing you know he’s grabbing the only box of Manalita (a brand new hop varietal from our pals at @‌freestylehops ) to use in the dry hop, along with his own blend of his favorite hops. You gotta give it to Scotty though, cause this beer came out so good! Dude is a legend. Tasting notes? Kern’s Mango Nectar, Cactus Cooler, Strawberry Nesquik, the zestiest citrus, the most tropical fruit, and the best of times. It’s one of my favorite IPA’s we’ve done this year. Shhhhh. Just don’t tell Scotty.

Better Late Than Deader

A West Coast IPA w/ HBC 586, Ekuanot, & Rakau

Switched out the hops on our Ain’t Getting Any Deader recipe, and hit this one with a yummo blend of American and New Zealand grown hops. The result? Light in color, super lean, lovingly resinous, and hitting with a flavor combo of strawberry shortcake, mango Hi-Chew, and blood oranges.

Peacharine! (it's what we like here)

West Coast IPA w/ 100% Peacherine Hops

When your pals at @‌freestylehops send a brand new experimental hop varietal your way, you give it a try! This New Zealand grown hop gets its name from the incredible mix of Peach and Nectarine aroma/flavor that it showcases. Flavor profile? Fresh peaches, tangerine zest, and matcha tea. Brewed in Oceanside.

DDH West Coast DIPA w/ HBC 586 & HBC 586 Cryo

We’ve been enjoying the absolutely incredible experimental hop varietal HBC 586 for quite some time here at our brewery, but we’re a bit tired of having to say some random number or then to even explain what it means! We hear our good pals over at @‌yakimachief have a name for this hop finally, but they can’t tell us yet. So here’s an insanely aromatic DIPA, double dry hopped for full intensity, with all the bright fruit you could hope for from these Washington grown hops. Tasting notes? Think Candied Orange Slices, Hawaiian Fruit Punch, and Captain Crunch Oops All Red Berries. The fruit on this one is so special and can be described in so many different ways. Let us know what you think!

Sleepin' In

Hazy IPA w/ Citra, Mosaic & Strata

Don’t hit the snooze alarm, cause you're not gonna want to sleep on this one!! Sorry, that was bad. Anyway. The body is pretty full, but then gets cleaned up by the super smooth bitterness from that big dry hop with the hops above and then hits with flavors of fresh strawberries, rainbow sherbet, kumquat, and a little dab of thai basil.

Just One Thing...Citra

DDH Hazy DIPA w/ 100% Citra

It’s our little series of beers highlighting the extremes of one single hop variety, double dry hopped to overload the senses with all of what it is. Our hand-selected lot of Citra from Yakima Valley hits with a flavor profile of Orange Sherbet, Dole Whip soft serve, fresh grand daddy purple, mandarin zest and those vanilla frosting vibes that I can’t get enough of.

DDH Hazy DIPA w/ HBC 1019

Nothing better than sitting back and relaxing, the old fashioned way, with a movie after the kids go down for the night, ya know? Sit in your favorite chair. Grab a can of something big and juicy maybe? Well, that’s probably too specific, but either way, we’ve got you got you covered here! With this one, we’ve gone big on the Citra and then light on this new experimental hop called HBC 1019. The result is wonderfully full bodied, juicy, and hits with hoppy layers of mango sorbet, caramelized banana, and starbursts. Stoked on this one!

The Mighty Rhine

German-Style Amber

Here’s a beer style originating out of Dusseldorf, Germany that we all refer to as Altbier. Fermented with the same yeast used for Kölsch, this is a sort of hybrid style of beer that gets fermented warmer than a lager, but then cold stored (lagered) until just right. Filtered to beautiful clarity, this one is dark amber in color, with lots of yummy dark fruit and toasted malt characteristics and a slight drying roast finish.

Collab w/ Siren // A Siren-Style Imperial Stout w/ Cacao Nibs, Amburana wood, and Candied Pecans

When our Pallys™ Darron & Sean from Siren came to town, we took those sweet sweet Brits to the best dive bar in town! As Country Music was sang, and whiskey was gulped, we put together our list of what ingredients would be added to this Siren-style Imperial Stout that we had brewed earlier that day. A couple months later, here we are! We didn’t use any extracts, but instead lovingly soaked each real ingredient into this one until just right (we even roasted every single pecan ourselves)! The result proudly shows each ingredient listed from sniff to sip, with the pecan aromatics coming together with the spice from the Amburana wood in the aromatics. The palate is rich and chocolatey, without being syrupy.

STS PILS

Kellerbier / Zwickelbier

STS Pils is a classic German-style pilsner but with a Russian River twist, this is because we dry hop this beer with a small amount of European hops. It is straw in color and will often have a slight haze due to the fact that there is a small amount of yeast left in the beer. This beer is hop-forward with a firm malt foundation, strong lager yeast characteristic, and a dry, bitter finish. It is often said that Pilsner is a study in purity, simplicity, and cleanliness of flavor. It should also be noted that water can make the difference between a good beer and a great beer when adjusted properly. We use a distinct water profile for STS Pils, which contributes to the crisp minerality in the finish. A truly great Pilsner is a difficult beer to perfect, as its light crisp flavor profile leaves little room for error. Modern brewing techniques (such as open-top fermentation) and old-world traditions create the distinct qualities in STS Pils.

PLINY THE ELDER - (Double IPA) Brewed with Amarillo, Centennial, CTZ, Cascade, Warrior, and Simcoe hops. Well-balanced with malt, hops, and alcohol. Slightly bitter with aromas of citrus, pine, and floral.
