We’ve got some Hard Lemonade for sale! And look at that color! That beautiful, natural color comes from the use of an insane amount of lavender pods that we use to brew a ginormous, fresh batch of lavender tea, that then gets blended with our lemonade-style seltzer. It drinks pretty balanced, with the acidity and sweetness hitting at just the right level, and then a soft tannic hit of dryness from the lavender. Enjoy straight out of the can, or pour over ice. Also legit with a dram of Old Tom Gin.
Inspired by the Paloma cocktail, Pierre has been hard at work these last few months trying to create the most perfect version of this yummo refresher using only the purest ingredients. Pink grapefruit juice, lots of grapefruit zest, and cane sugar come together with just the right amount of booze, acidity, and richness for that perfect sip of vacation vibes. You can enjoy this one at our spot, or take home cans to enjoy at yours. Served with a 'lil ice and a fresh grapefruit wheel.
Conditioned on a bed of fresh spruce tips, and then hit with a dab of cane sugar sweetness, lime, tangerine, juniper, and quinine so that this thing sing songs of Suuuuuuumer! Not your classic G&T, where the juniper jumps out of the glass, but instead that juniper nestles in with those others ingredients as a compliment to create something more contemporary and oh so refreshing. Served over ice with a lime wheel.

This may not be the buddy you can rely on to scare away all the seagulls from your snacks, but it's just a beer...what did you expect? It's an American Light Lager through and through, with all the drinkability you hoped it would have. Best served ice cold with some tasty waves.
A Mexican-style Lager w/ Lime Juice & Sea Salt This sessionable concoction is something you can drink glass after glass of, without tipping the scales too much, ya know? Don’t confuse this one with a Michelada (Clamato / lime / umami / secrets), that’s completely different! This is a Chelada, a Mexican-style Lager that gets hit with a good level of salt, a generous portion of lime, and is served over ice with a salt rim. It’s insanely refreshing and fun to drink.
We brewers are our happiest when we can take our time making a lager that we’re all stoked to drink. Using a mix of floor malted pilsner malt, Saaz hops from the motherland, a lager yeast that helps express the maltiness of the beer, and spund’d to create tiny bubbles of carbonation. Compared to German Pils, you’ll find this a bit richer and fuller, with a dab of mid palate sweetness that pairs well with the fine bitterness you can expect from this type of beer. Tasting notes? Think doughy bread, alpine herbs, and a lil honey.
A Golden Rye Lager Even though we called this one what we called it, there’s nothing aggressive about it! Just a wonderfully simple beer that shows off the German rye malt in a medium-bodied Helles-type lager, that’s got just enough oomph in it to make you stay for a few. Tasting notes? Not a sweet beer, but sniff and sips of fresh made biscuits, honey, bread dough, and dab of white pepper.

A Bavarian-style Hefeweizen, Don’t sleep on this draft only Bavarian-style Weißbier using all German ingredients! Our favorite one yet, we keg conditioned the entire batch to create its carbonation naturally for the fluffiest foam, and kept it unfined and unfiltered. The yummo flavorful yeast strain that we use during fermentation creates insane levels of banana smoothie vibes, and nutmeg spice to this one. Draft only.
This Italian-inspired lager uses a mix of European and American ingredients, from German and American Pilsner malts, French hops, and a lil technique learned from our fave Italian brewery originating the style. Dry and snappy, super pale and beautifully bright, for an anytime beer that speaks to you. Tasting notes? Lightly floral, with a dab of dried grapefruit peel, and thyme.
Max out of our Costa Mesa brewery lead the charge on this one, using Italian coastal barley and German grown Saphir hops. His love for Horror movies is shown in the name and through the art, paying homage to an over the top Italian Horror movie from the 70’s. Wonderfully aromatic with a dried lemon zest vibe along with some sage. The body is light on the palate, but the hops fill it out to create a wonderful tannin structure and a legit snappy bite in the finish.
We went against all the most popular “running a business” advice and we splurged! Using the brand new, absolutely delicious, worth every penny, New Zealand hops from our good good pal Brent of @machopsnz , this West Coast Pils is saturated with the most modern hoppy goodness from every sniff to sip. Tasting notes? The bright zesty citrus character is the star of the show, with some fresh pineapple and a dab of mango trailing behind.
Papa has been dreaming of this one for a while! It first got put onto paper, and now it’s here in liquid form! Although we don’t brew this style often, we thought it was the perfect time to do so given how wonderfully warm this summer weather has been. Papa wanted to focus on all French ingredients on this one to keep it as authentic as possible. Using pilsner malt from Champagne, a French saison yeast strain, and Petit Blanc hops, which were originally grown in the Champagne-Ardenne region near Burgundy. At first glance, you’ll notice the pure white pillowy head that everyone associates with saison. The aroma gives off bright lemony citrus along with an array of peppercorn and mild clove. The palate comes off fresh and spritzy, with a firm bitterness that carries it through the perceived sweetness of the yeast character. Finishing clean and dry, it begs for another sip… and another… and another! Magnifique! ?
The fire glowed beneath, steadfast and unyielding. The kettle boiled, it's breath heavy in the still air. Beneath the foam, a great aroma rose, rich and unrelenting. Then at last: hop upon hop, malt upon malt. BLACK. Deep as the abyss, immeasurably smooth. A mountain of Mosaic loomed vast, crowned with a gate of clean, unerring bitterness. A tower of Ekuanot ascended, and the plains of Chinook stretched into shadowed infinity. They saw it: The Doom Sludge All thirst departed.
Do you ‘member when IPA was clear? When you didn’t have to ask if it had all those fluffy little clouds in it? Well, living in the past isn’t always good, but this beer is! this beer is that beer, but modernized with the most legit Mosaic from @colemanag and Rakau from @freestylehops . Tasting notes? Think ruby red grapefruit, kiwi, the devil’s lettuce, and blueberries.
We’ve been loving our selected lot of Krush (aka HBC 586) and believed it was time to showcase it in one of our WC IPA’s! So, here's a simple recipe of Pilsner Malt and Krush to showcase this wonderful hop varietal best! We went lighter on the bitterness, doubled up the whirlpool and the dry hopping on this one. Flavor profile? Think intense guava, mandarin peel, spruce tips, and lychee.
Confused about the whole Cold IPA thing? Well, it’s a rice IPA, fermented with lager yeast at warmer temps, but still has the ol’ I.P.A. acronym, instead of the IPL (India Pale Lager) one. Oregon and Washington grown hops combine with a lean malt and rice bill to create something that smells like ripe Maui Wowee, grapefruit oil, and Orange Mamba.
This one was awarded a Gold Medal in the Imperial IPA category at the recent World Beer Cup 2024 beer competition! The brew team were all good lil Pallys the night before they brewed this one, got good sleep, ate their Wheaties, and watched this batch of hop saturated yum yum like a hawk. We were prepared this time! And I think it shows in how dope this one came out. Tasting notes? Think Navel Orange oils, yummo blueberry cereal, pineapple whips, and a linger of the freshest Maui Wowee.
Loaded up with a heavy dose of oats and raw wheat, along with some yummo Citra. We brought in Nelson and Peacharine because we really wanted to share the best of what our pals at @freestylehops have to offer. The result is insanely juicy, with a soft bitterness and hoppy mouthfeel that we’re pretty pumped on! Tropical fruit vibes for days
Our favorite hazy double returns and gets double dry hopped with lots of Citra! And dang, this batch is something real real special if i do say so myself. The hops take center stage and hit with flavors of ripe mango, fresh squeezed orange juice, and pineapple candy too.
A Bamberg-Style Smoked Dark Lager I’m not sure how much his neighbors appreciate this, but if you know Papa, you know how much he loooooves bbq’n at midnight. So here’s a beer to celebrate! Utilizing a range of unique German grown malts, this one features roasted rye malt, wheat smoked with oak, and malted barley smoked with beechwood, all on a bed of floor malted dark pilsner malt. We use just enough hops to balance it out, and lager to bring it all together. Tasting notes? The smoke vibes are noticeable in the sniffs, and pair wonderfully with the milk chocolate and graham cracker vibes in each sip. A liter worthy lager, with a dab of richness mid palate, and enough grip and roast bite to balance. Stoked on this one.
Get all those vacationy vibes locked in with the return of this pink wonder. It's our beloved Berliner-style Weisse with an insane amount of real guava added to it during fermentation. It proudly remains super sessionable and lovingly tart and juicy, with lots of fresh Guava aromatics and flavor.
Another release from our lil sour beer program out of our very own Rage Cave™️! Each batch is fermented in large French oak barrels and left to mature for our house yeast and bacteria culture to create a depth of flavor that can be treasured in each sniff and sip. The Passionfruit and Guava are added second, and allowed to ferment until wonderfully dry. The whole batch is then keg conditioned, allowing this third fermentation to carbonate the beer and develop delicious depth over the course of 6 months. The result? The palate on this one is our fave yet, with a refreshing acidity that melds well with a soft tannin profile that fills it out. We think it tastes like dried apricots, leather, and a rad mix of guava and passionfruit. Come get it. Draft only.
Previously developed on our 5-barrel pilot brewery and released as RnD #54 Hazy IPA, everyone enjoyed the beer so much, we decided to give it a proper name! Brewed with Brewer’s Gold, a hop variety over 100 years old that had largely faded into obscurity, this beer represents a collaboration between Vinnie and CLS Farms.
